Apple Coconut Muffins

I have had this post planned for the better part of two weeks now....but a flu epidemic in the house tends to put things on the back burner. We're all on the mend...just getting lots of rest and snuggles. Edward seems to have gotten it the worst....

Poor baby:( We went to the Dr. today...I was nervous of pneumonia. But the doc checked him all out, said his lungs are clear and all he needs is some serious rest and snuggle time! Sounds good to me!!

Now, onto our recipe! Apples and coconut are a delightful combination, I do believe! My kids concur! This is their favorite muffin of the moment...we made them twice in three days. :)

Apple Coconut Muffins
Makes 12 muffins

1 C flour
1/2 tsp. salt
1 tsp. baking soda
2 C peeled, diced apples
1 egg
1/4 C butter, melted
3/4 C sugar or Sucanat
1 tsp. (yep, that's right!) nutmeg
1/2 C shredded, unsweetened coconut

Preheat oven to 350*. Mix flour, salt, and baking soda together. In a separate bowl add the remaining ingredients and mix well. Add the flour mixture and blend until just moistened. Spoon batter into greased or lined muffin tins (3/4 of the way full) and bake for 25-30 minutes. Let rest in pan for a few minutes, then remove them to a cooling rack.
